Is this check sheet on its own enough for HACCP records?

This sheet is a general starting point for keeping daily records going, and it does not guarantee compliance on its own. What is required differs by business type, size, and region, so adjust the items to your own hygiene management plan and always confirm the latest requirements with your local health authority or a qualified professional.

When is the best time to fill it in?

Pin each entry to something you already do every day: the temperature check at the start of opening prep, the cleaning checklist at the end of close-down. Keeping the sheet and a pen right where each check happens also goes a long way toward preventing missed entries.

If a day was missed, can I fill it in afterwards?

Backfilling makes the record drift from what actually happened and undermines its credibility. Leave the missed day blank and pick the habit back up the next day. If blanks keep appearing, rethink the timing, the sheet's location, or who owns the checks each day.

Notes on managing with paper or Excel

  • Hands are full during service, so entries get pushed back and blanks tend to pile up.
  • Printing, restocking, and filing the sheets takes effort, and digging out past records to review them is slow.
  • In a kitchen, sheets can become unreadable from water and grease, or go missing binder and all.
